Christine's Cookies and Cream Cake Pops


½ packet plain biscuits
100gms Cream Cheese
2 teaspoons cocoa
2 Tablespoons condensed milk
Colourful straws
White or Chocolate buttons
Sprinkles

1) Crush biscuits in food processor until fine
2) Add Cream cheese, cocoa and condensed milk, Blend
3) Roll into balls about the size of golf balls, cut straws in half and insert into balls, chill for 30 minutes in the fridge.
4) Melt buttons until liquid, dip each ball into chocolate and let excess drain off. Dip into sprinkles before chocolate sets and put aside on a sheet of baking paper until set
Makes approx. 10


This recipe is great for birthday parties or just a snack. A treat for the whole family!

Caleb's Recipe

nana's Chocolate Log Sponge

Line extending tin with baking paper oven at 190c . (Fan bake)

  • 3 eggs
  • ½ cup sugar
  • ½ teaspoon vanilla essence
  • 2 tablespoons cocoa
  • ¼ cup plain flour
  • 1 teaspoon baking powder
  • 25 g butter, melted
  • 1 tablespoon water
  • Icing sugar
  • Raspberry jam
  • Whipped cream
  • Chocolate icing

Method


Beat the egg till white but not dry.Add 1/2 teaspoon of vanilla.

Add 6 table spoons of sugar beat well.

Add yolks beat well again.


Serve together 3/4 cups maige corn flour, 1 1/2 table spoons of plain flour, 1 table spoon of coco, 1 tea spoon baking powder.

Mix dry the ingredients through egg mixture by folding and breaking lumps until all mixed in.

pour into tin and spread lightly Cook approx 11 mins.

Turn out on to tea towel remove paper and roll quickly

Nana's Pineapple Upside Down Cake

Ingredients


2 eggs2/3 cup sugar6 tablespoons Pineapple Juice1 teaspoon Rum Essence1 cup Flour1/3 teaspoon Baking PowderPinch of Salt3rd of a cup of Butter1/2 cup Brown Sugar1 can Pineapple Rings1 Packet Glace Cherries

Method
Soften Butter and spread over the base of a cake tin or small roasting dish, sprinkle over Brown Sugar. Push Pineapple Rings into the Brown Sugar placing Glace Cherries in the gaps between the pieces of Pineapple. Beat the Eggs with a electric mixer for 5 minutes until light and airy. Gradually add in the Sugar as the Eggs are beaten for another 10 minutes. Add the Pineapple Juice and Rum Essence, carefully fold in the baking powder and salt. Pour mixture over top of Pineapple Rings and Brown Sugar, cook in the oven at 170 degrees celsius for 45 minutes until golden brown on top. cover top of cake with a flat dish or plate- flip the cake over and carefully lift off tin.


Mum collected recipes my Nana uses and put them in a book. We use that book a lot and this is the ICONIC one! It tastes like a really fat muffin and I like the pineapple taste. We enjoy this cake especially in autumn ... I like to help to put the pineapple in!



Ellen's Afghan Biscuits
Ingredients:
12 oz butter 12 oz flour
6 oz sugar 2 tsp vanilla essence
4 tbsp cocoa 3 oz cornflakes

Cream butter and sugar until light and fluffy, then vanilla essence,
flour and cocoa, mix well, Add cornflakes, roll into balls, flatten on
tray and bake in moderate oven for 15-20 mins. Ice with chocolate icing.
[ Optional-When out of the oven put half a walnut on top.]

This is a recipe that we use all the time for school lunches and smoko on the farm.
When made right they go down a treat!

India's recipe

Chocolate Brownie
Need:

2 eggs
1 cup sugar
¾ cup flour
100g butter
1 tsp baking powder
1/4-1/3 cup coco powder
1 tsp vanilla
2 handful's white or dark chocolate chips


Put baking paper on a deep dish and cut off corners of baking paper.
Melt butter. Mix in sugar and stir until creamy. Sift in flour, coco and baking powder. Mix.
Add eggs and vanilla then mix. Add chocolate chips. Pore into center of baking paper. Don't spread out.
Microwave on high for 5 minutes. Then check. Microwave for another minute or 2.
Cook for another 5 minutes. Flip out onto another plate/dish and cover with icing sugar (If you want).

Samjhana's recipe

Highlander milk biscuits


1. 250g butter

2. 50g condensed milk [ 2 tabs]

3. 250g sugar [2 cups]

4. 1 TSP vanilla

5. mix well [cream]

6. 2 cups flour

7. 4 TSP baking powder

8. mix well

make small balls.

can be topped with crystallised cherry.

cook for about 15 to 20 minutes at 160.
